    Tips:

    Preheat the pizza stone for a minimum of 15 minutes

    Turning the pizza: You need to take the pizza out of the oven to turn it every 5 seconds or so or it will burn.

    Never pull out the pizza stone when it is hot, this will cause it to crack with the quick temp changes. Allow it to cool completely before pulling it out to clean.

    Hard to ignite the oven? Try to follow the ignition guides:

    • Ensure pellets is dry, and ignite the hardwood pellets with a igniter or fire starter
    • Keep burning for about 3 minutes or 2/3 of hardwood pellets been ignited, then put the fire box assembly into the back of pizza oven with the handle, and put the door on and cover the hopper lid
    • Can use wind to speed the air circulation to make hardwood pellets sufficient combust when meet the strong smoke after refill the pellet
    • When burning time exceeds 30 mins please use the poker to remove the ash/dust in the ash grid, so that it can achieve better burning with air venting

    Pic on the wood peel is first attempt with pellets, pic on the rack is the first attempt with gas mod in place.The oven as designed is nice and does exactly what it advertises. Pellets can get the stone and the top fire to a good 800° within 20 minutes, and higher temps if you want to wait a bit longer - I personally don't need to.I did as others have described and modded an Ooni Gas Burner onto this, which is a monumental upgrade over pellets - PSA, be aware this would void any type of warranty on the burner or the oven. Self-tapping #10 1" screws will do the trick, but be careful to get the unit flush with the Big Horn - otherwise the flame will want to come out of the rear. Mounting this is a tad tricky, as there are a couple tiny screws in place where the burner would want to mount. Overall, the mod is doable but takes some handiness.This oven works as a pellet oven, but I found that the smokey taste from pellets is not what I'm looking for personally. YMMV, but my pellets coupled with the fire starter yielded a bit acrid of a smoke flavor. That result, plus the work it takes to manage the fire, led me to install the gas burner, which is much, much easier to use.If you get this oven in a sale and mod it for gas, you'll come out at least $100 ahead of getting the Ooni Karu. I believe you have to buy the gas attachment separately for that anyways. If sticking with pellets, don't get some expensive flavor pellets or anything - just get the lowest ash-content neutral pellet you find and it should be good.

    Good pizza at less than half the price of an Ooni. Fill the hopper with pellets, ignite with starter gel and a good sized butane torch. Use a small fan to create a draft for the flame. Let the oven heat up for at least15 minutes. Refill and relight the pellet hopper and when you see the flames coming out of the stack wait a minute, put the pizza in and close oven door. Do not add more pellets while the pizza is cooking. Rotate pizza every 30 seconds until cooked to your preference.

    Don't use pre-packaged shredded mozzarella! It has an anti stick agent that will cause it to burn rather than melt. Buy a low moisture bar or ball and shred it yourself. Stretch and shape the dough gently with your fingers working from the center outward on a flat surface with lots of semolina flour. Do not stretch at the edges. Place it on your pizza peel using a little cornmeal to keep it from sticking to it. Wooden peels are better for loading but the thinner metal peels are better for rotating and removing from oven.

    Being from CT, I grew up on and love New Haven style pizza but unfortunately I could not replicate that wonderful NH crust with this oven. The problem with topside open flame ovens like this is that the toppings will burn before you can get the crust to your desired crispness. If you prefer a softer, chewy crust than this oven will do just fine.

    I eventually bought the BakerStone 9152403 Portable Gas Pizza Oven and heartily recommend it for it's ease of use and it's ability to make a great New Haven style crust.

    After having friends with an Ooni oven, I took a chance with the Bighorn to save a few dollars. To keep this short, lets just say that this thing has outperformed my friends' ovens and become one of my favourite things to use outdoors. Simple to use, makes amazing pizza fast, the wood fired taste and smell is astounding, and an amazingly SOLID Stainless steel build makes this a must have. I have taken this thing all over in travels and it folds up perfectly and never fails.

    As well ... the company has the most amazing customer service! I was stupid enough to be using this outside in a -30 Canadian winter, and left the unit outside overnight after I was done using it. Sadly, due to my own error of letting this go from several hundred degrees Fahrenheit to minus 30 degrees Celsius, the pizza stone cracked. I contacted the company and within two days they shipped me a new stone free of charge!

    I would highly recommend this unit to anyone who asks, and the company has gained my full support in all respects. Grad yourself this oven, along with a pizza peel, and a Digital thermometer and get started making the best pizzas you'll ever make. Just writing this review is making me hungry for another pizza out of this beauty! I'd pay money just to smell the pizzas coming out of the oven! There are people who convert to propane with this, but I'd stick with the pellets to get the full experience and flavour. A few trial runs or questions asked to someone who owns one (heck ... feel free to message me if you need to) and you'll be knocking pizzas right out of the park.

    DON'T HESITATE! GET THIS NOW! ... and no I havent been paid to say this... it is really that good.

    Fantastic, easy to assemble and great to use. Took us a while to work out how to rotate. Only change we would make is hinged door as you need two people to open the door, insert pizza and close the door otherwise you loose hear from the oven. Otherwise great value for money and makes amazing pizzas!
