First, I spent a long time deciding on which pot to buy. I had almost decided on the basic Duo, because I don't think I'll ever sou-vide, and I don't bake often so don't care about the baking option. But I realized that if it was an option I would definitely forget to seal the lid! The Nova is basically the Duo but with an automatic sealing lid - totally worth it. Also an easier to read display, apparently, which I'm 100% in favor of since I'm old. I also went back and forth on 6 quart versus 3 quart. We're mostly 2 people, sometimes 3, so I easily could have gotten away with a 3, but decided on a 6 for three reasons: 1) most recipes are written for a 6 quart, 2) I LOVE leftovers, and 3) extra Holiday cooking capacity for guests.
So last week when I got the pot I put it all together and ran the water test, and immediately went online looking for recipes. I found a recipe for Spiced Red Lentil Sweet Potato soup, and other than sauteing the onion and garlic (right in the pot!) I just plopped in all of the ingredients, pressed the appropriate buttons and it was done in about 20 minutes. I started the recipe at 4:00 because that was when I finished the water test, and I was excited, but because of comments online I knew I could just leave it until we were ready to eat! So nice! When I opened it at 6 everything was hot and perfectly cooked and delicious!
Today we had a friend visiting who needed a snack because of low blood sugar. It was 3:30 and after giving him crackers and cheese I offered to make a cauliflower mac and cheese and it was so simple - just dump most of the ingredients, cook and then stir in the cheese. Again, so quick and easy, and delicious!
We won't be having any guests for Thankgiving this year thanks to Covid, but for the two of us I think I can put a turkey breast with some onions and herbs in the instant pot with potatoes above to steam, then make the gravy right in the pot from the drippings, mash the potatoes and DONE. Roasted brussel sprouts and pecan pie in the oven. Stove top stuffing or home-made stuffing in the slow cooker. Easy peasy. I think this will be my easiest Thanksgiving EVER!
I'm looking forward to trying lots more recipes! If you're on the fence, go for it. If you're not going to sou-vide I can recommend the Duo Nova. Sometimes simpler is better. I can't help with your decision on the size, though. My first recipe made so much food I haven't had to do much cooking since! It definitely made me think the 3 quart would have been fine. But then there's Thanksgiving....
day one made cold start yogurt (cold bottle of fairlife whole milk with a packet and a half of a yogurt starter (2 tbsp of yogurt with next batches) and you can add pint of heavy cream too but, i didn’t this time. i used the yogurt setting and 8.5 hrs later yogurt was done already. this made super thick yogurt after straining it, too thick actually!
day two, i made a rack of baby back ribs (seasoned with a dry rub) fit in it on the trivet by cutting rack in two, added water and some liquid animos and poof 45 mins later (includes a couple minutes in oven to crisp up the sauce) we were enjoying awesome ribs, hub says best i’ve made actually,
day three, made 9 eggs..DON”T listen to the 5/5/5 egg cooking method with this 3qt at least, it resulted in slightly greenish outer yolks and really dry yolks but, they tasted great mixed with mayo and peel so easily. i’m doing 2 minutes oh high pressure now and use natural release for 20 minutes and they are perfect and no need for a cold bath.
day four, made penne pasta with meat sauce and meatballs. i had some issues with this meal but, it was MY fault. do NOT stir your pasta like i did or you will get the dreaded burn notice!! on their site they tell you to add water first, then your sauce and layer your pasta on top and lightly push it down some but, don’t stir..
great group on FB for support, even a 3qt FB group with recipes just for it.
one thing i learned in this short time, is that it may be better to have purchased a 6qt right off the bat for the majority of the numerous recipes available online and in cookbooks are based on a 6qt instant pot.. however, this 3 qt is great for yogurt making, great for eggs, great for small deserts and great for making sides while you use a 6qt for your meats/pastas.. in the end i’m actually glad that i got the 3qt first for i can use both to make meals and don’t need stove to make potatoes and veggies.. only having to clean two inner pots and maybe a veggie steamer makes getting two sizes worth it to me..
the separate to buy instant pot silicone lid fits on this inner pot but, does not fit on the 3qt ceramic inner pot that you can buy to go with this (i like the ceramic pot for yogurt, doesn’t stick to it much at all on bottom)..
I was surprised that cleanup was just as easy with the Instant Pot as the Cuisinart even though this lacks a non-stick cooking pan. The stainless steel pan is heavy, durable, and cleans up easily. I'm glad I didn't order the non-stick accessory pan for this -- it's really not needed for how I use this.
I'm only using this via the pressure cooker (manual mode) option so I can't speak to how well the pre-programmed settings work. The performance as a pressure cooker is great -- every bit as good as the Cuisinart, and a bit faster to come up to temp even though it's a larger capacity. Hopefully the reliability will be as good as my trusty old Cuisinart which has yet to miss a beat. So far this is a solid 5-star performer.
