The Moroccan tagine is the traditional cooking vessel of the slowly simmered, heavily seasoned cuisines of North Africa. The distinctive cone-shaped lid promotes natural steam circulation to keep beef, lamb and other meats perfectly tender and exceptionally flavorful. And because it’s crafted of durable cast iron, the base cooks food evenly and retains heat longer. The colorful enameled surface minimizes sticking and staining, requires no pre-seasoning, and is easy-to-clean.

Cooking with cast iron

Enameled cast iron is a remarkable and robust material that performs well with modern requirements for food preparation and cooking. Whether you choose to stir-fry, slow-cook a casserole, sear a steak or bake a cake, there is a shape that is suitable. Cast iron performs well for either slow cooking or high-temperature searing.

Cast iron can be used reliably on any heat source, including induction, and with any oven or grill. It has the ability to retain heat efficiently, which allows for use of lower heat settings in stovetop and oven cooking. On the table, a hot covered dish will keep food hot for second servings.

Cast iron can also be used to keep foods cold. A chilled dish becomes an ideal cold food server on a hot summer day. It can also be placed in the freezer for food storage or advanced food preparation.

Heat recommendations

Le Creuset cast iron cookware can be used on all heat sources including gas, electric solid plate or radiant ring, vitro-ceramic glass, induction, and ovens fired by gas, oil, coal or wood. When using any glass-topped stove, always lift the pan when moving it; never slide it, as this may damage the stovetop or the base of the pan.

Always match the pan’s base size to the stovetop heat zone to maximize efficiency, and to prevent overheating of the pan sides or damage to the handles.

Gas flames must always be confined to the base area, and must never extend around the sidewalls of the pan. Long handles should be positioned safely where they do not hang over the front of the stove or other heat zones. recommendations.

Cleaning and Care

Always cool a hot pan for a few minutes before washing.

Do not plunge a hot pan into cold water. While Le Creuset’s enamel is designed to be the most durable on the market, thermal shock may still occur, resulting in cracking or loss of enamel.

If there are food residues, fill the pan with warm water and let soak for 15 to 20 minutes before washing. A brush can be useful for removing small food deposits, or for cleaning between the ribs on grills. Do not use scourers or abrasive cleaners on the cooking surface. Nylon or soft abrasive pads or brushes can be used to remove stubborn residues. To avoid damaging the enamel, do not use metallic pads or harsh abrasive cleaning agents.

Light stains or metal marks caused by metal tools can be removed with Le Creuset cookware cleaner. An occasional cleaning with this product will also retain the new appearance of your pans. Never store pans while they are still damp. Store pans in a dry cupboard or airy space away from steam.

Purchased this tagine after much deliberation, due to price and limited space in my kitchen and my life for stuff I don't use. With minimal intervention it is very simple to get tender cooked meats and well blended flavors. The cone helps avoid drowning the food in excess liquid, drying it out, or spending extra time tending the pan. Cleanup is a snap. The cast iron base is very versatile, which offsets the higher cost a bit. The le Creuset booklet contains recipes which are easy to follow. In particular the beef and olives recipe pleased some very selective eaters who are highly familiar with Moroccan cuisine.

I received the product intact as only the bottom is cast iron. The top is ceramic. Tangine cooking is remarkable. I've tried "simulated" Tagine cooking before, but owning a real Tagine makes all the difference. The food comes out perfectly cooked and very moist, which is the point. The only issue I have is that this Tagine is a bit small if one was to have dinner party type fare.

We had the earlier version of the Le Creuset tagine and loved it! Only problem was no lip at the top of the cover. It was repeatedly dropped and chipped.

If you have never used a tagine, you will love the moist cooking it provides. Hard to improve on this traditional cooker. Most people do expect that the top is a chimney when they see it. It is closed however to gather moisture and deliver it back to the edges of the pan. I am no scientist, but it works well and can be used for so much than Moroccan cuisine. It's great for stir fry and braising.

The tagine works as advertised. We've had three meals and all were excellent. On the "con" side, heat transfers to the lid and it can get quite hot. Size is an issue when trying to cook for more than three or four people. Other than that, we are very pleased with the results. The Tagine was delivered in just a few days, which was a pleasant surprise.

This tagine is GREAT for deer meat! We use deer meat a lot and it can dry out fast if you're not careful. The way the tagine works, keeps all of the moisture in the food and, after simmering for 2 hours, the deer meat was amazingly tender and flavorful. Nothing is wasted in the tagine- all the herbs and spices you use are infused into the meat and vegetables. Finally, I can use fresh herbs/spices and actually taste them in the food. :) I highly recommend!

You may be hesitant to buy the most expensive tagine, but I can assure you that the enameled cast iron base is worth the cost relative to other, less expensive tagines that have conventional cast iron bases and would require seasoning as well as special wash procedures.

I have never tried this type of cooking before but love it! It's like using a crockpot on your stovetop or in the oven. Fabulous dishes can be made with this unique Tagine cookware. My family love the meals too. Nice for a change of pace. Highly recommend.

Ottimo prodotto. Uso da tempo le pentole Le Creuset e la tagine è al livello delle altre. Possiedo alcune tagine in coccio, ma questa in ghisa mi permette di usarla nel fornello a induzione. Un’unica pecca. Mi è arrivata senza il pacco Amazon, con adesivo da pacchi ed etichette di spedizione direttamente applicato alla scatola del prodotto. E se avessi voluto regalarla? E poi io di solito custodisco queste preziose pentole nella loro scatola, e questa è tutta “scocciata” è un po’ consumata dal viaggio. È la prima volta che mi succede con Amazon, solitamente attento agli imballaggi. Peccato!!!

Erstmal das beste vorweg: diese Tajine ist nicht nur hochwertig, sie ist ein Schmuckstück und macht richtig was her.
Ich habe diese Tajine gewählt, weil sie induktionsfähig ist. Nachdem ich den gusseisernen Boden gesehen habe war mir klar, dass eine Schutzmatte zwischen Platte und Tajine muss, wenn ich das Glasfeld nicht komplett zerkratzen möchte. Die Größe von 27 cm ist gut für 2 (maximal 3) gute Esser. Ich werde mir die größere Tajine demnächst auch anschaffen, für Besuch reicht diese kleine Tajine keinesfalls.
In der Gebrauchsanweisung wird ausdrücklich darauf hingewiesen, dass die Tajine auf dem Herd nicht geschoben werden darf. Kein Problem, die Schutzmatte habe ich direkt bestellt.
Die Gebrauchsanweisung ist detailliert und im Anhang befinden sich noch ein paar tolle Rezepte zum ausprobieren.
Die Lieferung war unfassbar schnell. In der Nacht bestellt und 12 Stunden später bei mir angekommen. Perfekt und danke an Amazon!

OK, I gather that North Africans are switching from tagines to casseroles (Dutch Ovens) but who cares? This Le Creusot tagine is a work of art, while serving as a brilliant cooking vessel. It heats fast. The conical lid does what its designed for - condenses steam so that the moisture is recycled back down to the cooking section. The tagines I've tried have all turned out superbly. Yes, it's heavy, but the base has a lip which is easy to use when moving it from the cooker to table. Yes, it's expensive, but if entertaining is part show-business, there's not much better than putting this onto the dining table and whipping the top off. The one thing to watch is that smaller unit does not give much extra room for feeding more than four people. If you're into bigger guest lists, you'll need the bigger version. For me, this was a luxury purchase which I don't regret in any way.
