To be honest I was worried about the quality of the cooking and food preparation as I was trying to balance the potential risk of the nonstick coatings with food preparation. I am pleasantly surprised by the quality of the pan and my ability to nearly replicate the experience I get with my All-Clad stainless. I frequently sear roast food and make pan sauces. The ScanPan, while not as good as my All-Clad stainless is still very good, The fond is not quite as good but if I add the wide versatility the ceramic non-stick coating gives me I am not going to complain about it. I still use my All-Clad for much of my cooking but when I want to use a non-stick pan the Scanpan is very good; very good as a pan, not just a nonstick pan, as a nonstick it is excellent.
I carefully followed the instructions and so far after preparing multiple dishes I am very pleased and will purchase more of these pans. I have made pan sauces, cooked eggs, sauteed onions, mushrooms, many vegetables, and made sear roasted chicken breast and they have all come out tasting great and the clean up is easy. Cooking eggs I was able to just let the eggs slide out and they were delicious. I cook on a gas range if anyone is interested.
These are expensive so follow the directions - low heat, let the pan hear up prior to adding oil/butter, etc) cook on a lower heat setting than you might normally, etc.
Let me give a quick background - After we collected All-Clad for several years, it was evident that the non-stick All-Clad was not up to the task. It began to get old and clean-up became tiresome and difficult as the All-Clad non-stick coating wore down and honestly stopped working. We also own some of the All-Clad stainless that is "supposed" to be non-stick based on heating it first, but I find that to be untrue. For pots and other cookware we still like it.
Scanpan has become our favorite cookware over the last 3 years, and the first one purchased is as clean and effective as this brand-new one. No visible wear or tear at all, and a breeze to clean up. We started with the small 8 inch, then the 10 inch, and now the 12 inch to round out our collection and replace our last All-Clad non-stick. It is all very durable and fast to heat up, giving perfect even heating across the pan. All of our pans are the CTX line, which we found to be a bit more heavy duty and well built than the cheaper line- thicker with a better handle. I can't speak to how the cheaper line may work. My only small complaint is only during clean-up - the small steel buttons where the handle is attached is a bit harder to clean, and by saying this you know we are spoiled because the rest of the pan is clean with a wipe of a paper towel or cloth, then you have to scrub the buttons for a few seconds to remove food from them. No biggie. If only they were made from the same material!
I can't say enough about these - they are all we use now. Highly recommended and well worth the extra money!
We tried using cast iron and carbon steel pans, and they work great for searing, but not as well for things like eggs and sticky dishes that really need a non-stick pan.
When we saw the same pan come up on Amazon for less than half the price we originally paid for one, we jumped on it! Its SO GOOD to have this pan back again. It makes flawless egg dishes, is great for things like cream sauces, melting cheeses and even reheating thick chilis or beef stew. And cleanup is so simple, literally wash it out with warm water before the pan cools down, or use a soft scrubby sponge and dawn dish soap if it does cool.
Just don't use the pan for searing and it should last for decades. I do wish that it came with a good metal lid.
